Blueberries grown on one of our berry farms, have produced an Award winning velvety smooth, pure Ice wine which is decadent and morish.
TASTING NOTES
Dark berries and red fruits nose with a delicate hint of candied violet and rose petals. The palate is velvety smooth and devilishly pure, with ripe berry notes reminiscent of kirsch or blueberry jam. A refreshing acidity lifts the sweet finish.
Serve lightly chilled. Pairs perfectly with cheese boards, or alongside a rich chocolate dessert, or enjoy added to sparkling wine as an aperitif, or simply on its own as a fantastic digestif.
VITICULTURE
It takes 2 kilos of pure blueberries to make one 37.5cl bottle of Blue
Aurora ice wine. The blueberries themselves are substrate-grown in
buckets under polytunnels and then picked by hand between July and
October.
PRODUCTION
Once picked, they’re frozen and then pressed hard from frozen. The
press programme takes between 2 1⁄2 to 3 days, releasing more juice
as the berries start to defrost. The juice is then fermented in a
stainless steel tank for around 4 weeks. After fermentation the wine
is racked, filtered and bottled.

Tasting Note
Clear lemon gold with green hues. Poached pear, sweet lime, and elderflower cordial on the nose. A luscious and textured mouthfeel is balanced by a fresh acidity showing gooseberry fool, nectarine, and herbaceous nettle and mint on the palate.
Winemaking
Pressing: De-stemmed for a small amount of skin contact during pressing
Fermentation: Stainless steel fermentation, thiol aromatic yeast strain
Malo-lactic fermentation: Low diacetyl LAB, stopped before completion
Maturation: Stainless steel on fine lees
