TASTING NOTES
Pours a rich amber gold in the glass. Complex aromas of dried apricot, quince, raisins, and roast hazelnuts. This follows to the palate where the rich almost viscous, honeyed fruit flavours are met with a vibrant acidity giving a clean, balanced mouthfeel to match the intense sweetness. The finish is long and luscious with a hint of dates, liquorice and tangerine. Pair with chocolate desserts, treacle tart, or try with a good ewe’s milk such as Manchego or Berkeswell.
PROVENANCE
Dragon Orchard is located in the heart of apple-growing countryside in Herefordshire and has been in the family since 1887. It benefits from fertile Herefordshire clay and loam soils and is protected from harsh winds by the surrounding hills. It’s an accredited LEAF farm (Linking Environment and Farming), and the farmhouse has been awarded for its sustainability.
PRODUCTION
The juice of handpicked, late-harvested Conference and Comice Pears is filtered, frozen and gently thawed to allow the sugars, colour and flavour to be extracted, leaving water behind as ice - a process called cryo-concentration. This concentrates the juice to a potential alcohol of 20 – 22%.
This juice is fermented using champagne yeast to 10 - 12% ABV over 3 to 4 months. At this stage, the ferment is stopped and the resulting product is filtered sterile, bottled and further aged in the bottle before release.

PAIRING NOTES
This sweet wine pairs wonderfully with rich desserts, as well as with delicious dark chocolate.
Tasting Note
Clear lemon gold with green hues. Poached pear, sweet lime, and elderflower cordial on the nose. A luscious and textured mouthfeel is balanced by a fresh acidity showing gooseberry fool, nectarine, and herbaceous nettle and mint on the palate.

Pressing: De-stemmed for a small amount of skin contact during pressing
Fermentation: Stainless steel fermentation, thiol aromatic yeast strain
Malo-lactic fermentation: Low diacetyl LAB, stopped before completion
Maturation: Stainless steel on fine lees
